Leaf thinning
In the vineyard, shortly before flowering, we use an agronomic technique that enhances the aromatic profile. Removing some leaves triggers a natural response in the vine, causing it to shed part of its flowers. This thinning results in looser clusters with more widely spaced berries and thicker skins, leading to greater aromatic intensity

The grape harvest
Each cluster is carefully hand-picked to ensure that only the finest grapes make it into our wines. The meticulous care involved in manual harvesting, combined with the use of small containers, helps maintain the grapes’ integrity and freshness.

Bâtonnage in bottle
Once a month, after secondary fermentation, the cellar master gently stirs the lees in each bottle to prevent them from settling. This process prevents the development of unwanted odors that could mask the wine’s fine aromas and compromise its purity and finesse.
