First of all the raw material: the grapes grow on the shores of Lake Iseo which is part of the UNESCO biosphere reserve of “Valle Camonica – Alto Sebino”, in an ideal climate for the growth of vineyards, and on a soil whose morainic origin offers a extraordinary richness of added minerals, fundamental to form the basis of quality viticulture.
The harvest is carried out strictly by hand, the bunches are placed in small crates to be taken whole for soft pressing. In this way the organoleptic qualities of the product remain unchanged and express themselves at their best.
The time factor is also fundamental, because the natural refermentation takes place in the bottle, and the subsequent slow maturation and refinement on the yeasts are never less than 18 months.

Produced from 100% Chardonnay grapes grown in lands of morainic origin between the areas of Erbusco, Adro, Cazzago, Gussago. The soft pressing in a lung press preserves the organoleptic qualities in a grape juice that passes a first and second selection.
The controlled temperature fermentation at 14 degrees allows it to express all its aromas and scents. It has a vibrant, incisive and vital character. The aroma is fresh, decisive and spicy, rich in yeast fragrance. In the mouth it is well balanced and structured with good flavor and freshness.
CENTINARI FRANCIACORTA DOCG DOSAGE ZÉRO.
Born in the vineyards located in the areas of Erbusco, Adro, Cazzago and Gussago, produced entirely from 100% Chardonnay grapes. The consolidated method involves refermentation in the bottle, slow maturation and refinement on the yeasts, for no less than 18 months: it is precisely thanks to their lysis that it achieves its particular sensorial profile, with rich aromatic complexity.
Fresh, elegant and well-balanced character. Light and delicate color with gold filigree reflections. On the nose it opens with hints of ripe fruit, light notes of vanilla and a light toasted tone deriving from the yeasts.
